Joe Mercuri is chef and co-owner at mercuri, a hotly-anticipated new restaurant in Old Montreal. He is Executive Chef at Houston Restaurants, and, with his wife, was the owner of Brontë,  named “Best New Restaurant in Canada” by En Route magazine in 2004. In  this Grilled interview, he talks about his career, and about what makes Montreal’s respected chefs who they are: passion, discipline, embracing diversity, a willingness to experiment, and the ability to make being an outsider work for you.
